…when salads, and fruit, and dainty portions of grains just won’t cut it…
….when fresh and bright cocktails are replaced with bourbon, red wine, and dark, heavy beers…
…and, when dinner is just not dinner without a hearty bowl of gumbo perched in your lap.
It was Monday, and I was starting my second week of working from home post-Sandy. Instead of sitting on the couch with my computer in my lap for another whole day, I decided to engage in a little work-related “research.”
My plan was to make Emeril’s chicken and smoked sausage gumbo – a dish that simmers on the stove for hours and that I usually wouldn’t have time to make on a Monday. Luckily, this Monday was different.
Be prepared to give this gumbo some major TLC, but I promise you, if you do – you will get a whole lot of love in return. Creamy and rich, filled with the most tender, melt-in-your mouth chicken, and smokey bits of sausage – it will warm your soul!
